Step one of Mission Sauce: Obtain a White Sauce.
This white sauce by Rachael Ray is simple and delicious. It’s probably pretty standard, but I liked it so well that makes its humble way to the “Sauce” section of my Recipe Binder.
2 T butter
2 T flour
2 Cups vegetable stock
1/2 cream or half-and-half
1/2 C grate Parmigiano Reggiano cheese
1/4 t. nutmeg
salt and pepper, to taste
Melt butter in a skillet. Whisk in flour and cook 1 or 2 minutes. Whisk in stock and let it bubble. Whisk in cream and Parmigiano cheese, season with nutmeg, salt and pepper and thicken 1 or 2 minutes.
